Cattleman’s adds 4th restaurant

Steakhouse will open on Hurstbourne Parkway

Cattleman’s Roadhouse, a Shelbyville-based restaurant chain, is about to grow – and just in time for the holidays.

The restaurant, owned and operated by Bill Hisle and Stuart Meredith, is adding a fourth location, at 2901 S. Hurstbourne Parkway in Louisville. An announcement from Hisle said he expected the facility to open in late November.

Cattleman’s, a casual steakhouse, also operates just off I-64 in Frankfort and just off I-65 in Shepherdsville. Its original location is on Breighton Place in Shelbyville.

The newest location is a 7,000-square-foot facility formerly occupied by Max & Erma’s. The release said the restaurant expects to employ about 50 workers.

Hisle said in the release that moving to Louisville seemed the right move at this time in his career.

“I began my restaurant career in Louisville,” he said. “My partner, Stuart Meredith, grew up in eastern Jefferson County. We have personal and business relationships in Louisville and a number of regular guests who travel to our restaurants for steaks.

“As we considered our next move, it just made sense to decide on Louisville.”

Hisle, a longtime resident of Shelbyville, began his career with the Grisanti organization in Louisville in the 1980s before returning to Shelbyville to open Bistro 535 in downtown Shelbyville. After Meredith joined him, they expanded restaurant’s catering business. Shortly after opening their first Cattleman’s location in Shelbyville, they sold Bistro 535 to focus on growing the steakhouse concept.
